Step-by-Step Cooking Method
Step 1: Marinating the Fish Clean the fish fillets and pat them dry. In a bowl, mix yogurt, lemon juice, turmeric, red chili powder, garam masala, ginger-garlic paste, and salt. Coat the fish pieces evenly with the marinade and let them rest for at least 30 minutes.
Step 2: Cooking the Rice In a pot, bring water to a boil and add bay leaves, cloves, cardamoms, cinnamon, and salt. Add the soaked basmati rice and cook until it is 80% done (grains should still be firm). Drain the water and set the rice aside.
Step 3: Preparing the Masala Heat ghee or oil in a pan and sauté the sliced onions until golden brown. Add ginger-garlic paste and green chilies, sauté for a minute. Step 5: Layering and Dum Cooking In a heavy-bottomed pot, spread a layer of cooked rice, followed by a layer of fish and masala. Repeat the layers until all ingredients are used up, finishing with a rice layer on top. Drizzle some ghee and sprinkle saffron milk (optional) for added aroma. Cover with a tight lid and cook on low heat for 10-15 minutes (Dum cooking method).
